If you ever wonder what to drink in Hanoi, the answer would definitely be “Ca phe trung” (egg coffee).

Firstly I just want to admit that I’m not a coffee lover, I prefer tea and smoothie. However, living in Vietnam I'm so happy that I can experience café culture and try Egg coffee - Cà phê trứng, a drink that you could probably fall in love with.

Egg coffee is a popular drink in Hanoi, the North of Vietnam. The best coffee goes with egg yolk

French culture, Vietnamese style.

The coffee culture was introduced to Vietnam by French. If you’re in Hanoi, you can visit Cafe Giang, where egg coffee was born. There is no doubt that egg coffee is a favourite drink in cold day, the creamy of egg yolk and the smell of coffee will melt your heart. But if you can't visit Hanoi? That's totally fine, cause I'm here to solve the problem for you. HAHAHA!

Why egg and coffee?

You might wonder how can egg combines with coffee. But I just can say to you this: Weird name but awesome taste. Trust me, you should try egg coffee once in a lifetime.

The simple ingredients are egg yolk, Vietnamese coffee powder, sweetened condensed milk and butter. One thing that makes this coffee become a symbol of Vietnam, personally I think that’s egg yolk. Who can think that egg yolk can go so well with coffee? Egg coffee can be served in hot and cold. But honestly I prefer the hot version, it just makes me feel warm and really cozy. I'm pretty sure that this drink will steal your heart in the first try! I'm not kidding! I really like the taste of this drink, very creamy and sweet like a tiramisu cake. Another point for this drink is the beautiful look, the egg mixture mix with black coffee create a stunning look.

Whether or not you're a coffee lover, you'll definitely want to try egg coffee.

Special note: Tip for making successful egg coffee

The important part of this beverage is the egg mixture, I've learnt this technique in baking class :) And I think that it's very necessary for you guys to know before making egg coffee.

To make a fluffy egg mixture, you should use room temperature eggs, you can take eggs out of refrigerator in 30 minutes before use.

If you don't have time, this technique can save you. While whisking you can put your egg's bowl into another bowl with hot water. This will makes the egg mixture has a fluffy texture.

HOW TO MAKE CÀ PHÊ TRỨNG

GET YOUR GLAZE ON

  1. Brew the coffee. (In here I use Vietnamese stainless steel coffee filter)

  2. Crack 2 eggs, only keep the egg yolks. Add 2 tbs sweetened condensed milk and 1 tsp butter.

3. Whisk the egg yolks, sweetened condensed milk and butter together until the mixture have become thick and stick. You can whisk it by hand but to save time I recommend you to use electric whisk.

4. Whisking for a few minutes until the egg mixture turns light yellow and fluffy. (For better result, please see my special note above)

5. Pour the egg mixture over the top of black coffee cup.

6. You can add coffee or cacao powder on the top of the egg mixture (this is optional but in Vietnam we add cacao powder for better taste).

Worth knowing: In Vietnam, the right way to drink Cà phê trứng is you put your coffee cup into a bowl of hot water, to keep the coffee warm.
