Vietnamese soup (súp) but not soup.

This heartwarming soup is a famous appetizer for wedding or group parties in Vietnam. My grandmother often prepared this dish on special occasion, when every family members gather together to have a party.


The soup has the natural sweetness of corn

This easy chicken corn soup with shiitake mushroom is a famous Vietnamese soup. Soup also be my favourite dish to cook. Why? Because it’s very easy to prepare and cook. All the ingredients can be easily found in supermarket. Soup is also in a list of popular Vietnamese street food, with 2 types: crab soup and chicken soup.

The taste.

Soup is the simplest and most satisfying dish you can make for your family. It can be served plain, but if you want to garnish, you can add spring onion or cilantro (fresh coriander). The unique of this soup is the chicken broth, using chicken bone broth gives the soup its nutty flavour.


The soup strikes the ideal balance between protein and veggies.

Let's be good to ourselves.

Want to let your kids eat more vegetable? Soup will be the best choice! The wonderful of this dish is it can increase the vegetable consumption. Moreover, carrot is a good source of vitamin K and vitamin B6, the combination of sweet corn and carrot is very eye-catching and will make your kids like it. Personally, I really love corn, it makes the soup has the natural sweetness of corn. As I said before, this soup is a perfect balance between veggies and protein. so if you're looking for food with high protein and low fat? Chicken breast is an answer! In this recipe, I used boneless chicken (chicken breast) very easy to cook and won't takes much time to cook.

For me, this soup is an easy cooking dish with 3 main ingredients which are chicken, corn and shiitake mushroom, you can add various ingredients if you want.

Soup is a healthy way to start your meal. High in vegetables and low energy density



HOW TO COOK VIETNAMESE CHICKEN CORN SOUP





  1. Bring the water to a rolling boil in a large pot. Put the chicken and 1 tsp salt to boil. Remove any foam or fat that on the surface. Cook on medium heat around 15 minutes.

  2. Take the chicken out and tear into thin strips.

  3. Pour hot water in a bowl of mushrooms. This will soften the mushrooms


4. Add the mushrooms, corn and chicken breast strips in the soup pot and stir well.

5. You can add extra salt to taste. Pour the cornstarch into the soup to make the mixture thickness.

Note: For Vietnamese style, you can add fish sauce to taste. You can find fish sauce at any Asian market.

6. Add 2 beaten egg yolks to the soup and stir well.

Put some soup in a bowl you can put spring onion and black pepper on top.

Worth knowing: In Saigon, soup is a dish also known as "Energy-boosting" after school. Same as Vietnamese mix rice paper (Banh trang tron), crab soup is a favourite snack of Vietnamese student.
